Abstract
: A new type elderly milk was made by adding vitamin B

, DHA, and choline,
which could prevent Alzheimer. Different influencing factors were investigated through single factor tests
and the optimized formula was obtained through the orthogonal experiments. The results indicated the op鄄
timal formula was: 1郾 7 mg / kg vitamin B

, 11 mg / kg vitamin B

, 300 mg / kg DHA, and 700 mg / kg cho鄄
line. In the product, the viable contents of vitamin B

, vitamin B

, DHA, and choline were 1郾 04, 8郾 6,
253, and 547 mg / kg, respectively, which was benefit to brain health.
