Abstract
: In order to increase the yield of sucrose鄄6鄄acetate which is catalysed by candida rugosa lipase,
the method of this paper was that the surfactant was added into the two鄄phase system to formate the mi鄄
celles, then use the candida rugosa lipase as catalyst to synthesis sucrose鄄6鄄acetate. The results showed
that compared with the control group, the esterification rate and sucrose鄄6鄄acetate rate significantly in鄄
creased in surfactant cetyltrimethyl ammonium bromide group. The optimum conditions as followed: reac鄄
tion medium is butanol / H
2
O, content of water is 60% , the concentration of surfactant is 10 mmol / L,

(vinyl acetate) 颐
n
(sucrose) is 3颐 1, pH 9, reaction at 35 益 for 4 h. The sucrose acetate esterification
rate is 71郾 2% , the selectivity of sucrose 鄄6鄄 acetate is 56郾 4% .
