一些相关的标准和指南 . 在溯源系统的研制上, 我
国与西方发达国家仍有较大的差距, 许多制度还不
完善,许多关键性的问题还尚待解决, 如产品质量安
全问题产生的原因、 产品质量安全监控技术与监控
体系、 溯源信息系统建设等. 粮油产品众多, 生产、
加工、流通过程简繁不一, 因此, 我们必须依据不同
粮油产品自身特点,加强研究,建立粮油产品质量安
全追溯体系, 为实现 “ 从农田到餐桌的全程粮油食
品质量可追溯冶 提供科学依据.
5摇 结摇 语
21 世纪是一个“ 绿色 冶 的世纪,“ 绿色生产冶 也
成为新世纪我国粮油加工业发展的重要方向, 绿色
粮油产品,无论是其初级产品, 还是加工产品, 在整
个绿色食品产业中占据极其重要的地位. 因此, 通
过现代加工工艺有效控制和降低有害物质污染, 加
强粮油产品质量检测,实施全过程质量控制措施 ,是
保障粮油食品质量安全的重要手段.

Quality and Safety Issues and Countermeasures for Grain
and Oil Products Processing

Abstract: Quality and safety problems will exist in grain and oil products processing which may manifest
in three aspects:raw materials, processing technology, illegal indiscriminate use of additives. The safety
problems in the processing of raw materials present as pesticide residues in grains, mycotoxin contamina鄄
tion, heavy metals pollution etc, and safety problems in machining process present as excessive process鄄
ing, trans fatty acid and harmful substances migration to packaging materials. Quality and safety counter鄄
measures of grain and oil products suggest strengthening supervision of quality and safety, increasing the
propaganda dynamics, strengthening the process control and management, constructing quality and safety
traceability system.
