Abstract
: 2鄄phenylethanol is an important flavour and fragrance compound, which has positive synergy
effects for other aroma components in food, cosmetic, tobacco, and daily chemicals. The metabolism
mechanism and latest research of 2鄄phenylethanol in microbes and plants were reviewed in this paper.
