Abstract:In order to explore the physiological changes and quality differences of broccoli stored under different temperatures, the picked broccoli was stored in three kinds of environments:ordinary refrigerator [(4.0±1.0)℃], precise temperature control freezing temperature store [(-0.5±0.3)℃] and phase temperature store [(-0.4±0.1)℃]. The results showed that the storage period of the refrigerated broccoli could reach 30 days. After 30 days, the contents of TSS, chlorophyll, vitamin C, soluble protein decreased, and the quality of broccoli gradually deteriorated. After 70 days, the broccoli stored at precise temperature control(controlled freezing-point temperature and phase temperature) was full in color, rich in nutrients, lower in respiration intensity and ethylene production rate, lower in decay rate and yellowing index, higher in superoxide dismutase and catalase activities, less in membrane damage, and stronger in body defense system. The broccoli stored at controlled freezing-point temperature and phase temperature for 60days, vitamin C mass fraction was 37.70mg·100g-1 and 46.53mg·100g-1, flavonoids mass fraction was 12.30mg·100g-1 and 15.56mg·100g-1 and catalase activity was 67.20U·g-1 and 120.00U·g-1, respectively. And respiratory intensity was 463.79mg·(kg·h)-1 and 416.90mg·(kg·h)-1, ethylene production rate was 83.37μL·(kg·h)-1 and 63.07μL·(kg·h)-1 and superoxide dismutase activity was 1543.91U·g-1 and 1588.55U·g-1 at 70 days, respectively. Compared with controlled freezing-point temperature, phase temperature storage could delay the decrease of vitamin C and flavonoids content, control respiratory intensity and ethylene production rate, and keep superoxide dismutase and catalase activities at higher levels (P<0.05). Precise temperature control(controlled freezing-point temperature and phase temperature) storage could control physiological changes and effectively delay the quality decline rate of postharvest broccoli, and phase temperature storage was better than controlled freezing-point temperature storage.
