Journal of Food Science and Technology covers various sections, including notable contributions, expert forums, unique research, primary research, applied technology, and safety supervision. It mainly publishes the latest research findings in food science and technology, processing technology, storage and preservation, analysis and detection, clean production, safety supervision, machinery, and packaging technology. This includes research papers exploring new theories, methods, and technologies and high-quality review articles reflecting the frontier developments in the food science discipline.
I. The journal has specific submission requirements, including
1) Originality, reliability, clarity, rigor, innovation, scientific merit, accuracy, practicality, and readability.
2) Authors must ensure no authorship disputes, duplicate submissions, confidentiality breaches, or political issues.
3) Submissions must include: Chinese and English titles. Author names and affiliations. Abstracts (within 400 words). Keywords(5-8 words). Captions for figures and tables.
4) Figures and tables should be necessary and be distinct from the text.
5) The cited literature must be the most important, up-to-date, and relevant literature that the author has directly read. The format should follow GB/T 7714-2015 "Information and Documentation - Rules for Bibliographic References." In the manuscript, citations should be numbered in square brackets in the order they appear, with Chinese journal literature requiring a bilingual presentation.
6) The following research content is not within the scope of this journal:
a) Tobacco, non-drug traditional Chinese medicines, cooking techniques, medicine, pharmaceuticals, and mathematical derivations. b) Antioxidant and animal experiments without using specific functional component extracts. c) Survey reports, market analyses, and consumer behavior analyses. d) Functional or toxicological tests on specific commercial products. e) Content related to educational reforms. f) Pending patent applications where the experimental material composition is not disclosed.
II. Submission and Manuscript Processing Cycle
Authors can submit manuscripts through the journal's online submission system at http://www.btbuspxb.com. Manuscripts should be prepared according to the journal's template, which can be downloaded from the submission system. All submissions undergo an initial review by the editorial office and a double-masked peer review by at least two external experts. The editor-in-chief and associate editors conduct a final evaluation, evaluating the manuscript's scientific merit, novelty, and practical relevance. From the date of receipt of a submission meeting the publication requirements, the journal typically makes a decision within one month. Authors are welcome to inquire about the status if the decision is delayed beyond this timeframe. Authors may proceed with alternative arrangements if no decision is received within three months. III. Copyright
Upon acceptance, authors must agree to grant the journal exclusive rights to compile, translate, reproduce, distribute, and online disseminate the manuscript. Authors who disagree with this should declare their intention during submission; otherwise, they will be assumed to consent to these terms.
IV. Publication Ethics
The journal strictly examines manuscripts for academic misconduct. Authors must ensure that their submissions are original works that have not been previously published and do not involve any copyright infringement or disclosure of confidential information. The editorial office uses plagiarism detection software (CNKI-Academic Misconduct Literature Detection System) to check for originality. Appropriate measures will be taken for manuscripts that involve academic misconduct, and the authors' institutions, funding agencies, or regulatory bodies may be contacted if necessary.

VIII. Author Remuneration
The journal does not charge any fees. Upon initial publication, authors will receive a one-time honorarium (including copyright licensing fee) and two complimentary copies of the issue. If the journal republishes the article in other formats, no additional honorarium will be paid to the authors.
