Abstract:Stachyose is a new functional oligosaccharide. Foods containing stachyose were approved as the special health care foods in many countries. The preparation method of stachyose was introduced in this review. Its physiological functions such as stimulating the growth of bifidobacteria, regulating intestinal flora and lowering blood fat and pressure were reviewed. The application of stachyose in food, pharmaceutical, cosmetic and feed were discussed.

Abstract:Pigments in cereal products including mung bean, millet, purple rice, fine dried noodles and instant noodles were extracted using methanol-ammonia-water as the solvent. High performance liquid chromatography (HPLC) was used to determine the concentration of tartrazine, sunset yellow, carmine, amaranth, and brilliant blue in the extracts simultaneously by the multi-wavelength (428, 482, 254, 510nm, and 600nm) method, using methanol and 0.02mol·L-1 ammonium acetate as the gradient elution. The results showed that the detection limits of tartrazine, sunset yellow, carmine, amaranth, and brilliant blue were 1.01, 1.70, 4.38, 1.14ng, and 5.32ng, respectively, the average recovery was around 82%~102%, and the relative standard deviation (RSD) was 0.6%~5.3%. This method is simple, time-saving, and the sensitivity is improved for the multi-wavelength treatment reduces the disturbance of other components.

Abstract:The wheat germ was baked at 140℃, 170℃, 200℃ for different process time (10,15 and 20min), respectively. After adding methacrylami as the internal standard, the sample was extracted by water and then deproteinized by carrez solution and defatted by n-hexane, after that the sample was extracted with ethyl acetate, then evaporated to 1 ml. Then the concentration of acrylamide is determined by gas chromatography to compare the content of acrylamide under different baking conditions. The result showed that the linear range of concentration of acrylamide was 0.125~2.0μg/mL(R2=0.999), the average recovery was from 88.1% to 104.6%, and the relative standard derivations were lower than 6.7%. At the same baking temperature, the content of acrylamide in wheat increased with the increase of baking time. At the same baking time, the content of acrylamide decreased with the increase of baking temperature (170~200℃).

Abstract:The water and oil content in the instant noodle are two important factors for the quality of the noodle. In this paper, the effect of fried time and fried temperature on the quality of the instant noodle was investigated. The results showed that the longer fried time and higher fried temperature would lead the lower water and higher oil content in the noodle. In addition, the effect of fried time was correlative with that of fried temperature on the quality of the noodle.

Abstract:Zymomonas mobilis Can be useful as bioenergy with high ethanol tolerance, high ethanol conversion, and high ethanol production. The influencing factors were studied about Two-dimensional gel electrophoresis technology on Zymomonas mobile, and the optimized conditions for 2-DE map were established. The result showed good repeatability and high resolution. This technology built the foundation of comparative proteomic analysis and clonging of the high ethanol producing ratio gene.

Abstract:The fermentation media and culture conditions of Bacillus subtilis B-115 were optimized for producing poly γ-glutamic acid. The optimal fermentation conditions for poly γ-glutamic acid production were as follows: corn saccharification liquid 6.5%, peptone 0.4%, L-glutamate 4%, MgSO4 0.15%, MnSO4 0.006%, KH2PO4 0.8%, CaCl2 0.003%, NaCl 1%, inoculums level 2%, flask content 50mL/250mL, pH 6.5, temperatuer 37℃, rotation speed 150r?min-1, and fermentation time 84h. Under the optimal conditions, the yield of γ-PGA was increased from 57.85g/L to 68.3g/L.

Abstract:The procedure of AOAC 2000.11 was simplified to determine polydextrose in beverages in this paper. Relative standard deviation of this method is 1.4%~6.4% and the recovery is 95.2%~107.3%. The results indicated that the method could be used to determine polydextrose in beverages.

Abstract:Multistage countercurrent extraction (MCE) technique for extraction of glycyrrhizic acid (GA) from glycyrrhiza uralensis Fisch was studied in this paper. The effects of countercurrent extraction stages, temperature, extraction time and ratio of water/licorice on glycyrrhizic acid percentage extraction, which is defined as the ratio of mass of glycyrrhizic acid (GA) in the extracted solution and mass of licorice root, were investigated. The appropriate MCE conditions were obtained from the orthogonal test. The percentage extraction efficiency of GA was analyzed by high performance liquid chromatography (HPLC). The results showed that the effect of extraction temperature on percentage extraction of GA was the most remarkable factor and the stage is the least one. The optimum conditions of MCE are five stages extracting 60min for every stage under 60℃. The ratio of water/ licorice is 6∶1. In the optimal conditions, the yield of glycyrrhizic acid is higher than that of microwave-assisted extraction (MAE), ultrasonic extraction (USE), Soxhlet extraction (SHE) and extraction at room temperature (ERT) for 54min, 40min, 4h and 44.3h, respectively. Due to the high extraction efficiency and less time and solvent consuming, MCE is recommendable to the application of GA extraction from glycyrrhiza uralensis Fisch.

Abstract:A high performance liquid chromatographic method was developed for the determination of soybean isoflavones in Natto and Natto Capsule, and the method showed good repeatability and sample stability. Soybean isoflavone were extracted from defatted soybean, Natto and Natto capsule by heating circumfluence method. Four kinds of soybean isoflavone including daidzin, genistin, daidzein and genistein were determined. The results showed that the soybean isoflavones in Natto were 1260mg/kg, which were 30% higher than that in soybean, and the soybean isoflavones in Natto capsule were 11% higher than that in soybean.

Abstract:The electronic nose input methods of fragrance and product odor information was optimized. The flavor and the odor information changes of the corresponding products during the storage could be distinguished using this input method. Two flavors and products odor changes during the storage were tract using electronic nose, and the correlation between flavors and the corresponding products odor change during storage was analyzed.

Abstract:A fungal pathogen, strain 074#, was isolated from infected peach fruit during postharvest storage periods. Morphological characterization and ITS rDNA analysis confirmed that the strain 074# was Botrytis elliptica. The pathogenicity tests confirmed that Amygdalus persica is a natural host of Botrytis elliptica. The Biolog Microbial Identification System with FF MicroPlate was applied for carbon source utilization test of Botrytis elliptica based on their abilities to utilize 95 discrete substrates. And the result showed that the carbon metabolic fingerprinting of isolated strain was composed of 26 optimal carbon sources, including D-fructose, sucrose, L-malic acid, succinic acid, D-gluconic acid, L-aspartic acid, L-serine, adenosine, denosine-5'-monophosphate, as well as 14 available carbon sources and 55 unavailable carbon sources.

Abstract:The effects of culture conditions on the growth of Chlorella. sp were studied. The nutrient factors showed obvious effect on Chlorella.sp. The culture conditions based on BG-11 were optimized by orthogonal experiments: Na2CO 3 0.02g/L, the initial pH 6, the ratio of nitrogen to phosphorus 30, inoculum 5%, temperature 25℃, illumination 8800lx. Under the optimal culture conditions, the growth rate of Chlorella.sp was enhanced significantly.

Abstract:The self-repair technology of composite materials and self-repair principles of microcapsules were introduced in this paper. The weight loss and noise reduction of machine in food machinery could be achieved by using the composite gear made of self-repair materials of microcapsules. The effect of self-repair microcapsules on the vibration of gear made of composite materials was revealed by analyzing noise data under different temperatures during the vibration of new gear made of composite materials. The results showed that self-healing microcapsules reduce the friction of the gear noise.

Abstract:The vibration mechanism of the valve of the refrigerator compressor was analyzed. The measurement schemes of the vibration property of the valve were studied using the suction valve of a type of compressor as the research object. The experimental system for measuring the valve vibration property was established. The sound signal was used as the exciter and the Laser Doppler Velocity meter was applied to measure the vibration response of the valve. The preliminary experimental analyses of the vibration properties of the valve were accomplished.

Abstract:A new method based on near infrared spectroscopy technology was established to detect peanut oil adulteration quickly. Four kinds of adulteration samples of soybean oil, rapeseed oil, palm oil and blend oil and five samples of pure peanut oil were collected for detection. Near Infrared spectrums of the samples were normalized as the input variables to SVM. The kernel function of SVM was RBF. The best combination of penalty parameter c and RBF kernel parameter γ were selected by gird search and K –fold cross validation (c=1024,γ=1). The recognition ratio and prediction ratio were 100%. The experiments showed that the fast detection technology based on NIR and SVM was practicable for identifying peanut oil adulteration.
