Abstract:This article reviews the present researches on nutrition and health care function of soy protein, especially the studies on the effect and mechanism of hyperlipemia reduction, insulin sensitivity improvement and weight reducing effect enhancement. Author also introduces the current status and developing trends of soy protein industry in China, it is declared that revitalization of soy protein industry is essential for augmenting the Chinese daily protein intake and remitting the high chronic disease morbidity.

Abstract:Food hazard, especially chemical hazards, like the pesticide residues and heavy metals pollution, mainly from planting and breeding process before food processing, only can be controlled in the primary stage .Certification is an important means to ensure food security from the institution and the system. Our country attaches great importance to the control in the primary stage. Now we have basically established from the fields to the table, whole process management food and agricultural products certification system, which access to international standards and adapt to the condition of our country.This paper mainly introduces food production quality, safety control model and its role of the control function in pesticide and drug residues in the primary stage .

Abstract:Ultrasonic-assisted extraction (UAE) of oligosaccharides from lotus (Nelumbo nucifera Gaertn.) seeds (LSO) was studied in this paper. The three parameters, ultrasonic power (300~500W), solid to liquid ratio (g/mL) 1∶15~1∶25, and extraction time (30~50min), were optimized using the Box-Behnkens Design (BBD) with a quadratic regression model built by Response Surface Methodology (RSM). The order of three parameters on the LSO yield was as follows: solid to liquid ratio>ultrasonic power>extraction time. The highest oil yield, 1.13% (w/w), was obtained under optimal conditions for ultrasonic power, solid to liquid ratio, and extraction time at 320W, 1∶25, and 48min, respectively. The LSO yield extracted by UAE was significantly higher than that by using hot water extraction (HWE: 68.18%) and microwave-assisted extraction (MAE: 29.88%).

Abstract:The influence of different acid treatment on protein yield (PY), hydroxyproline (HYP) content, protein distribution and viscosity of fish gelatin was investigated in this paper. The results showed that proton concentration greatly affected the gelatin extraction rate. The protein yield of acetic acid, citric acid and HCl were 13.50%~20.55%, 10.52%~20.01% and 4.32%~20.86%, respectively. The highest protein yield and hydroxyproline content using the three acids were similar, while the corresponding viscosity was different. Gel electrophoresis results showed that the extracted gelatin contained mostly α-chains and β-chains, and the gelatin with more α-chains showed better viscosity properties.

Abstract:Based on conventional enzyme linked immunoassay (ELISA) , a convenient, rapid and accurate one-step sulfonamides (SAs) residue chemiluminescent enzyme immunoassay (CLEIA) detection method was established through obtaining monoclonal antibodies from immunizing mice which was injected with SAs-BSA coupling protein, and optimizing test parameters such as antibody concentration, reaction time. The results showed that the best detection range of this method was 1.0~81.0ng/mL, the IC50 was 3.047ng/mL, the detection limit was 0.74ng/mL. Compared with conventional ELISA, the CLEIA method can not only increase the detection limit and sensitivity, but also shorten the reaction time by 60 minutes. CLEIA kit is more appropriate for rapid detection of the SAs residue in food.

Abstract:To obtain an efficient method for determination of total vitamin C (VC) in bee pollen, high-performance liquid chromatography (HPLC) was employed and investigated for its stability, precision and repeatability in qualitative and quantitative analysis of total VC in bee pollen. As the results, total VC content and chromatogram peak area presented good linear correlation. The recoveries were 95.71%~98.60% with RSD 1.05%. The RSD of the stability and precision experiments were 2.12% and 1.1% respectively. Total VC content in rape bee pollen was 36.99mg/100g in average, and its RSD was 1.43%. In conclusion, HPLC can be used as a simple and fast method for qualitative and quantitative analysis of total VC in bee pollen.

Abstract:A method for determination of 5-hydroxymethylfurfural by high-performance liquid chromatography in Zhenjiang vinegar was developed. Samples were analyzed on a Venusil XBP-C18 column with oven temperature of 30℃, using a mixture of methanol and water (5∶95, v/v) as the mobile phase with the flow rate of 1.0mL/min, and detected at 284nm. Within the linear range of 0.0143~0.0858μg, the correlation coefficient was 0.9999. The method was accurate with the average recoveries rate and relative standard deviation of 98.66% and 5.53%, respectively.

Abstract:ICP-MS method was used for determining the content of heavy metals including Cu, Zn, Pb, Cr, Cd, and Ni of different grade green tea. The influence of immersion time, immersion times on six metal elements leaching rate was studied. The results showed that the contents of heavy metal harmful to human body in tea decreased with the green tea levels increased. The content of heavy metalsin leaching solution of the tea increased in former 30 minutes as the immersion time increased, then the element leaching rate reduced with the increase of immersion times.The content of Cu, Zn, Pb, Cr, and Cd were 0.044, 0.300, 0.0101, 0.0017, 0.0039mg/L, respectively.

Abstract:"Schaal heat-resistant test" was used to accelerate the deterioration rate of a kind of cookies. Acid value (AV) and peroxide value (POV) of the cookies stored at 60℃, 50% relative humidity (RH) were measured periodically. At the same time, the corresponding sensory evaluation was processed. Storage time and logarithm of AV and POV were fitted, and the shelf life of cookies at 60℃, 50%RH was 23 days. According to the oxidation kinetic equation and Arrhenius equation, the shelf life of cookies at 20℃, 50%RH was predicted to be 368 days.

Abstract:The preparation of enmicrocapsulated citrus oil soft candies by spray-dried method process and the effect of microcapsulation were investigated. The effect of covering materials concentration, ratio of middle materials and covering materials entering temperature on product quality was studied. The results showed that the optimized conditions were modified starch of 25%, the ratio of core to wall material of 1∶1.5, entering wind temperature of 150℃, outlet temperature of 75℃.The microcapsulated citrus oil soft candies showed good taste and high stability during storage.

Abstract:Antifreeze proteins (AFPs) are the thermal hysteresis proteins that have the ability to modify the growth and inhibit the recrystallization of the ice. Antifreeze proteins aroused great interests of many researchers due to its special structure and functions. Recent studies are focused on their antifreeze mechanism and genetic engineering in attempts to better understand how exactly AFPs work. AFPs have wide applications. They can aid in the food storage and transplant organ cryopreservation, also by transgene they could enhance the antifreeze ability of crops. This article reviewed the recent advance in its antifreeze mechanism and genetic engineering.

Abstract:The kinematics parameters and constraints of a typical vibrating sieve which was used as potatoes classifier were analyzed in this paper. And these parameters were optimized by complex method accomplished in the environment of Matlab software. The results proved that the complex method mentioned in this paper is an effective tool for potatoes classifier optimal design, which could offer foundation and method to design some machineries related to potatoes classifier.

Abstract:With the development of science and technology, we have to consider maximization of the benefit of ecological economy as well as the social benefit of relief rescue . The food emergency logistics operation needs to optimize resources, reduce the waste of resources, and realize both social benefit and economic benefit. The food emergency logistics system frame and food emergency logistics response model were established in this paper. The model considers the uncertain environment traffic, food quality and other influence factors. Some simulation calculations on food emergency logistics distribution based on particle swarm optimization were developed. The consequence indicates that the distribution scheme is feasible and effective, which is of important reference value for food emergency response and food surveillance.

Abstract:A scientific and efficient food safety management team should be organized to lead the development of enterprises. The food safety and quality assurance system for savory flavoring industry should be improved. A comprehensive grasp of national laws and regulations and product standards, and the in-depth understanding of customer demand were necessary. The scientific and rational design of each recipe and the risk assessment were needed. Also the risk assessment of raw materials, good control of the production process and the public security emergency response mechanism should be established.
