The safety problems existed in marketing, transportation and slaughtering of animal and poultry were discussed in this paper. The relevant laws, regulations and the practical application of monitoring method were introduced, and the suggestions were put forward to strengthen safety supervisoin of animal products in marketing, transportation and slaughtering of animal and poultry.
