    Abstract:

    The flaxseed gum was extracted from flaxmeal with water in this paper. By using single-factor and orthogonal experiments, the optimum conditions of extraction were obtained as follows: the ratio of material to liquid, 1∶125, extraction temperature, 70℃, extraction time, 90min, and washing for 1 time. Under these conditions, the extraction rate of flaxseed gum could amount to 32.0%. The effect of concentration, pH, temperature on the viscosity of flaxseed gum solution and the effect of concentration on the rate of emulsion were also studied.
