Abstract:Freshness makes a major contribution to the quality and processing suitability of aquatic products, and directly affects the value of the final products. Freshness assessment is essential for the safety, transportation, storage, and processing of aquatic products. The current methods, for the assessment of fish freshness, are subjective, unilateral, and time-consuming. How to quickly and objectively evaluate fish freshness has become an urgent issue to be resolved in aquatic products processing industry. In this paper, the post mortem quality changes of aquatic products were briefly introduced. Moreover, various kinds of methods to assess freshness of aquatic products, including sensory analysis, microbiology, chemical analysis, physical measurements as well as freshness indicator protein evaluation were reviewed. The merits and demerits of different methods to evaluate freshness of aquatic products were also summarized.

Abstract:The flavonoids were extracted from Stropharia rugoso-annulata Farlow and the antibacterial activity on E.coli, Penicillium and S.cerevisiae was studied in this paper. The extraction conditions of flavonoids were optimized by orthographic experiment. The extraction rate could get to 7.94‰ under the optimum extraction conditions including ethanol concentration of 95%, material ratio of 1∶90, 60℃, and 120min. The growth of E.coli and Penicillium could be inhibited by 40g/L of the flavonoids from Stropharia rugoso-annulata Farlow. Only E.coli could be inhibited by 20g/L and 10g/L of the flavonoids. The flavonoids showed no obvious inhibition effect on S.cerevisiae. The results indicated that the flavonoids from Stropharia rugoso-annulata Farlow have stronger inhibition effects on E.coli than Penicillium.

Abstract:Volatile compounds in irradiated pork were detected by headspace solid phase microextraction (HS-SPME) coupled with gas chromatography-mass spectrometry (GC-MS) in this study. The results showed that the types and peak area of volatiles in irradiated pork were more than those in nonirradiated pork. More alcohols and aldehydes with C5-C9 were detected in the pork after irradiation treatment, these compounds originated from the polyunsaturated fatty acids oxidation. In addition, sulfur compounds with low threshold values including dimethyl sulfide and dimethyl disulfide were also detected in the irradiated pork, which may be degradation products from sulfur-containing amino acids after irradiation. It was believed that these sulfur compounds were responsible for the off-flavour of the irradiated pork.

Abstract:Peptides with high ACE-inhibitory activity were prepared from Casein non-phosphopeptides (CNPP) which was the by-products of Casein phosphopeptides (CPP) by coupling enzymatic hydrolysis with membrane separation. Five enzymes (Protease N, trypsin, Flavourzyme, AS1398, Acid protease) were employed to hydrolyze CNPP for the second time and meanwhile 1K membrane was chosen to separate the product. Results showed that Protease N has an obvious superiority other other enzymes in preparation of high ACE-inhibitory activity peptides. The ACE-inhibitory activity was 56.08% when the protein concentration was 1g/L.

Abstract:A molecularly imprinted polymer was prepared by cyclic voltammetry method in gold electrodes using O-aminophenol as the functional monomer, melamine as the template, K3Fe(CN)6 as the imprinting electrode and the bottom of liquid probe, based on which a new method for detecting melamine rapidly and selectively in liquid milk was constructed. The optimum reaction conditions during the polymerization process were as follows, the ratio of monomers and templates of 0.275∶1, pH 5.5, 30℃, and elution time of 6min. The linear range of the method is 0.5~7.5mg/kg, the relative standard deviation is 6.1%~6.4%, the limit for determination is 0.5mg/kg, and the time for analysis is 6 min. The recovery is 87.5%~109% when testing the actual liquid milk samples. This method could be used for detecting melamine in liquid milk continuously and automatically with high selectivity and sensitivity.

Abstract:The factors which influence the enzymatic hydrolysis of chicken fat, including lipase, emulsifier, reaction temperature, pH, reaction time, enzyme loading and shaking rate, were investigated in this paper. Then response surface methodology (RSM) was applied to study the effect of temperature, enzyme loading, pH and reaction time on the hydrolysis process. The results showed that the second-order polynomial models fit the experimental data adequately. The hydrolysis parameters for the optimal acid value were obtained as follows, temperature of 46.6℃, enzyme amount of 0.5%, reaction pH of 6.4, reaction time of 4.33h.

Abstract:The shrimp paste is a kind of convenient, delicious, nutritious, and healthy food, while the traditional production technology is still limited to the natural fermentation, which is time-consuming, and cannot meet modern production requirements. In this paper, the modern biological technology fermentation and advanced flavoring technology were adopted to produce the shrimp paste flavor with Qingdao oyster shrimp as the raw material. The technology has solved the drawbacks of traditional one and the shrimp paste flavor has a unique aroma and delicious flavor of raw shrimp.

Abstract:The experimental modal analysis was conducted on the vibration and isolation component of compressor in food refrigerating unit using LMS Test. Lab software. The natural frequency, natural mode of vibration and damping ratio of the first four orders were obtained by comparing LSCE with PolyMAX algorithm. The research results are important for the vibration and isolation design of compressors in food refrigerating unit, and also provide the significant basis for the research on vibration and noise reduction in large-scale food refrigerating unit.

Abstract:The numerical simulation of velocity and pressure parameters of the flow field in pressure relief device of continuous ultra-high pressure sterilizing system was conducted. The results indicated that the pressure fell rapidly around inlet of the micro-channels. Velocity change was consistent with pressure drop which was obvious nearby the inlet of micro-channels. And homogenizing pressure was relieved slowly from inlet to outlet of the micro-channels. In the inlet of the micro-channels, velocity changes were mainly effected by the device structure. Complicated solid wall boundary which may cause the flow more violently and the shearing and impacting enhanced will be beneficial to sterilizing effect.

Abstract:The packing head motion control system of the packed-salt production line was studied in this article. The motion control of the whole system could be achieved by using personal computer and ACR 9000 controller as the control center of this system, and the Permanent Magnet Brushless Linear DC Motors and Compax3 drive as the complete NC system. Linear permanent magnet brushless DC motor could get the movement characteristics and working conditions by simulating packing machine head of the movement. Permanent Magnet Brushless Linear DC motor has many advantages such as high velocity, low vibration, low noise, and locating the position accurately. ACR 9000 controller adjusted by PID was used to collect the motion parameters. The whole system was improved with high efficiency, accuracy, and dynamic performance, and could meet the packing requirements.

Abstract:A rapid and undamaged method to identify different kinds of starch based on the near infrared spectroscopy and clustering analysis was put forward and the feasibility was analyzed in this paper. The wavelength range is between 12500cm-1 and 4000cm-1. The spectra of starch were identified qualitatively according to clustering analysis which is a kind of spectra pattern recognition. The result showed that the starch samples could be identified accurately into two kinds with the first-derivative preprocessing spectra by clustering analysis. The classification exactness rate of 100% was achieved. At the same time, the accuracy of the model was verified using the testing set samples and the exactness rate was nearly 100%. The near infrared diffuse reflectance spectroscopy and clustering analysis could be a rapid and undamaged approach to discriminate the species of the starch with great accuracy and reliability.

Abstract:The multiple data fusion model based on the detection of smell, pH value and surface color of lamb was established using artificial neural network training. The results correspond to the meat freshness standard TVB-N. The detection model provides a rapid and non-destructive testing of lamb freshness.

Abstract:The content of nicotine, reducing sugar and protein of the tobacco was determined based on the near-infrared spectrum of tobacco samples. Principal component analysis method was used to compress data and extract figures when combining with eight appearance characteristics of tobacco. The dimension of sample was simplified and the input of probabilistic neural network was optimized. Then the correlation between inner qualities and appearance characteristics of tobacco was analyzed by the probabilistic neural network. The results indicated that the inner quality could be predicted by the probabilistic neural networks.

Abstract:A method of starting Windows Mobile which is the smart phones operating system from the mass storage SIM card was proposed in this paper. Mass storage SIM card has a SD Interface to store Windows Mobile kernel of the mobile phone. And this kernel is used to start and run mobile phones in order to ensure that software of the customized mobile phone can not be modified freely, as well as to ensure the completeness and integrity of mobile phone's function. The method was proved feasible when being validated on the mobile phone used for development.
